Verrine of fromage blanc mousse and raspberry coulis

Ingredients

  • 2 boxes of St Mamet raspberries
  • 1 lemon
  • 300g cottage cheese
  • 3 eggs
  • 1 sachet of vanilla sugar
  • 70g sugar

Preparation

  • Drain the raspberries and mix them with the lemon juice and 10g of sugar.
  • Mix the egg yolks with the cottage cheese, vanilla sugar and 60g sugar. Beat the egg whites with a pinch of salt and fold them gently into the mixture.
  • In each glass, pour raspberry coulis and then the fromage blanc mousse in alternating layers.
Tip: Before serving, sprinkle with crushed pistachios or crumble for a crunchy texture.
