Pineapple, mango and coconut pancakes

Ingredients
100g flour
2 tablespoons of sugar
½ teaspoon of salt
3 eggs
30cl coconut milk
1 tin of Pineapple Chunks
560g St Mamet
1 box of Mangoes 425g St Mamet
1
5cl cane sugar syrup
20g coconut powder
Preparation
Recipe
Mix the flour, sugar, salt, whole eggs and coconut milk. The dough should be fluid. Leave it in the fridge for a few hours.
Cook the pancakes. Leave to cool for 1 minute.
Drain the fruit and cut it into small cubes.
Mix them with the cane sugar syrup and the grated coconut.
Arrange the fruit on the pancakes in the shape of an almond and close with a wooden spike.
Reheat slightly in the oven and serve warm
