Chocolate pear pancakes

If it's not always easy to find something to do with the children, you have to add menu development to the mix. So why not mix the two by offering your little rascals the chance to get their hands dirty? The recipe for chocolate pear pancakes is here.


For pancakes:

  • 50 cl of milk
  • 3 whole eggs
  • 125g flour
  • 1 pinch of salt

For the chocolate sauce :

  • 80g sugar
  • 160g full cream
  • 100g milk chocolate
  • 100g of dark chocolate 70%.
  • 1 good pinch of fleur de sel

For the garnish :


  • Heat the pancake mixture: in a large bowl, make a well with the flour, add the milk and beaten eggs, 25g of melted butter. Mix with a whisk from the inside to the outside, taking care not to make lumps. Strain and leave.
  • Make the pancakes.
  • Cut your pear halves into small cubes.
  • Bring the cream to the boil and set aside.
  • In a thick-bottomed saucepan, over a high heat, pour 20g of sugar and let it melt without stirring. Then add the remaining 20g, let it melt again: the caramel should be liquid and amber. Do not stir, just shake the pan. Remove from the heat and add the very hot cream. Put back on the heat for a few moments and mix well with a mixer.
    Add the chocolate and the fleur de sel and stir again to blend the mixture.
  • Pour a good layer of hot chocolate on the bottom of your plate, place your warm pancakes and pear cubes on top and enjoy immediately.
