- 2 cans St Mamet mango
- 1 can 400 ml coconut milk
- 2 tablespoons chia seeds
- 2 teaspoons orange blossom
- Mint
> Start by pouring the contents of one of the St Mamet tins into a bowl, removing some of the juice (about 2 tablespoons) and reserving it for fruit salad-type preparations. Blend the mango in its juice with a hand blender or directly in a blender.
> Using the other tin, separate the juice from the mango pieces and cut into small pieces.
> In another bowl, mix the coconut milk with the chia seeds, stirring well to blend, then add the orange blossom.
Start with your mango coulis, a few spoonfuls of pudding, then topping with mango pieces and a mint leaf.
