Pineapple, mango and coconut pancakes

Ingredients

  • 100g flour
  • 2 tablespoons of sugar
  • ½ teaspoon of salt
  • 3 eggs
  • 30cl coconut milk
  • 1 tin of Pineapple Chunks 560g St Mamet
  • 1 box of Mangoes 425g St Mamet
  • 15cl cane sugar syrup
  • 20g coconut powder

Preparation

Recipe

  • Mix the flour, sugar, salt, whole eggs and coconut milk. The dough should be fluid. Leave it in the fridge for a few hours.
  • Cook the pancakes. Leave to cool for 1 minute.
  • Drain the fruit and cut it into small cubes.
  • Mix them with the cane sugar syrup and the grated coconut.
  • Arrange the fruit on the pancakes in the shape of an almond and close with a wooden spike.
  • Reheat slightly in the oven and serve warm
